Matured in a Bourbon Hogshead for 6 years and 5 months then finished in a 1st Fill STR ex-wine hogshead. Date Distilled: 17.02.2014 & bottled at CS: 30.03.2022 with an outrun of 335 bottles. As always NCF & NC
Appearance: White wine. A semi-viscous film forms around the inside of the glass. A thin tide mark with a few thin trails seeping down to the surface. Some beading and teardrops from after a while too.
Nose: Raspberry ripple ice cream, subtle Turkish delight, some malted hot drink and a little sweet spice. The ABV is there but carried fairly well. There’s some fruit sweetness coming through now: apple and maybe strawberry. A vegetal quality lurks behind the sweetness, nothing specific but nice and summery. I also get a white wine grape note now. Does anyone remember those white chocolate skull sweets that had a sweet liquid inside that was supposed to be blood?
Palate: A nice semi-viscous mouthfeel. The ABV is immediately noticeable and warming. Quite a spice-forward palate, predominantly white pepper and cinnamon. Some white chocolate, berries and a little dryness. I also get a little hairspray acidity.
Finish: Raspberry, vanilla and icing sugar. It’s a supercharged sweet dram this one. Medium to long.
Overall: A lovely dram. Really enjoyed how even this one small dram evolved, I reckon a bottle would be awesome and offer so much.
