Hyde No 12 Irish Single Pot Still Whiskey (5 years old) 46% ABV

Hyde’s inaugural pot still is here! This Single Pot Still is triple distilled from a mash bill of malted barley, un-malted barley, and Irish oats. It is then matured for at least 5 years in 200 litre, alligator flame charred, ex-Bourbon, white oak casks, sourced from a Bourbon distillery in Kentucky, U.S.A. before being finished in Oloroso sherry casks from Southern Spain.


Appearance

Damp straw/ lemon yellow in colour, it has a nice thick swirl line, and nice thick legs. #HydeWhiskey

Nose

Grilled pineapple, apricot pastries, a mixture of sweet and citric lemon, cereals and grains, pears, and linseed oil atm. #HydeWhiskey

More time is bringing an earthy note, dunnage, wood polish, and lemonade ice lollies. #HydeWhiskey

Palate

Medium mouthfeel initially, and it’s spicier than I expected. Lots of cinnamon and vanilla, bitter lemon, liquorice torpedo sweets, bourbon like cherry flavour too. It develops quite quickly into vanilla sweetened black coffee. #HydeWhiskey

More time and I’m getting a little drying, no sulphur (thankfully), hickory smoke espresso, raisins, and the stoned fruits still persist. The ABV is good here too, the spices do last well on the palate I have to say. #HydeWhiskey

Finish

Long side of medium in length, and the spices are still here, fruits are weaving in and out, more dark plums, figs, and chocolate coated raisins by this point, but it doesn’t become bitter for me, it stops short. Flat cola and dandelion and burdock too. #HydeWhiskey

My thoughts

Iv’e been enjoying Irish whiskey for many years, over 35 of them so far, (where did they go?). For a couple of reasons i haven’t tried too many in the past 2 years. So, when this tasting was announced i knew i wanted to be involved, it would potentially be my first Hyde whiskey.

Obviously i got a place on this Hyde St Patrick’s day tasting, to say i was pleased is an understatement. So it was time to taste Hyde’s inaugural Single Pot Still Whiskey.

From the off this whiskey is so fruity, it’s actually refreshing as such initially, and then the ex bourbon cask spices really come forward and mingle beautifully with the fruits. Just when i thought i had tasted everything this Pot Still whiskey had to offer it started offering darker fruit notes, a nuttiness noted by many, and some black/espresso coffee. I will also say it has a very nice mouthfeel, and the ABV works well also, it’s not overly complex, but i don’t think it’s meant to be. Coming in at close to £43 i think it’s a great whiskey, very refreshing and easily sipped. Yes i’d love a bottle in my cupboard.
