
11 yr old is back; after the success of the 2020 initial release, it is with great delight that we can finally release the 2021 bottling.
The official tasting notes talk of baked apples and hints of almonds but they don’t convey the sublime rich oiliness of this whisky – we are incredibly proud to once again launch this showcase of our distillers fine work.
The 2021 bottling is limited to just 3600 bottles. The joy of whisky is the history that passes by whilst we wait for it to mature; The year we distilled this whisky Prince William get engaged, Cameron become prime minister, Downton Abbey hit our screens, the Iceland volcano caused travel havoc…time has little meaning in the creation of a single malt whisky.

Appearance
This is mid gold in colour, with a thick swirl line and wonderfully thick legs, and very slowly dropping. #thewhiskeychaps
Nose
Yes the nose is a little sweeter for me, Cream soda, icing sugar, apricots, nectarines, a little dusty too, It also has the royal icing like the Virgin oak bottling, with red berries #thewhiskeychaps
Palate
Again very nice mouthfeel, and again quite spicy, fuller i’d say, and still quite fruity. Ginger, cinnamon, cranberries, nutmeg, some vegetal flavours, perhaps a little nutty too, yes the 1st fill bourbon is lovely and spicy. The peated cask in the mix is obviously quite light but is detectable. #thewhiskeychaps

Finish
The finish on this one is long side of medium too, lovely and warming, cream soda, ginger root, vanilla custard too. Mocha with a dusting of chocolate, liquorice allsorts, and white pepper. #thewhiskeychaps

My thoughts
I have to say i was a fan of the first batch of the 11yr old bottling, and again this batch 2 bottling shows good character. The mix of 1st and 2nd fill bourbon casks has been done well, the spiciness is here, and the peated cask in the mix is light but accessible. I’d have had a bottle of batch 1 and i’d happily have a bottle of this batch 2 also.
Notes – This whisky is non chill filtered and natural in colour.
