“…the second expression in The Irishman Founder’s Reserve Cask Series, a limited edition finished in rum casks from the tiny tropical Caribbean island of Saint Lucia. The Irishman Founder’s Reserve – Caribbean Cask Finish is a rare vatting of Single Pot Still and Single Malt whiskeys finished for 6 months in Chairman’s Reserve Rum casks.”

Appearance: Light gold, cider vinegar colour. Forms a film, more than legs when swirled #walshwhiskey
Nose: Founders Reserve nose: Quite peaty for me, burnt sugar and caramel. A very deep nose really hits the senses! I like this! Lot’s of honey, vanilla and Xmas spices, nice and warming sweetness. You can definitely smell the rum influence, it’s very precise (for want of a better word), rather than just an added sweetness. Although I can’t stand Bounty bars or desiccated coconut, it’s odd that I like it in this?!
As the glass is nearly empty, there’s a man made wood aroma which reminds me of wooden fascias?
Palate: Good lord the palate’s good! Intense concentrated sweetness, nice chilli heat and that warming chest ‘hug’! This is VERY nice. There’s a butteriness, maybe even creaminess that offsets the heat and intense fruit so well. Really nice balance and very morish. Like sticky toffee pudding with cream
Finish: The finish is a continuation of the palate. Good balance between the fruits, warming chili heat hum and butter/creaminess
Overall: Of the 3 tasted so far, this is easily my favourite. The benchmark was set high early on, but this really pushed my whiskey buttons
For me, the Founders Reserve was sensational, closely followed by the CS. But all 4 samples were top notch and I’m very impressed! #WalshWhiskey
