The Aultmore Octave cask NO: 9535589 has aged for 13 years in oak casks, then spent the final 9 months in a sherry octave cask. This release of only 82 bottles, is bottled at cask strength, non chill-filtered and natural colouring.


Appearance: Old gold. A thick swirl mark forms above a viscous film. Many teardrops and medium to thick trails form quickly. After some time the swirl mark starts to bead.

Nose: A nice level of alcohol, not too strong but unmistakably present.
Quite a fruity and cake-like first nose, strawberry, freshly baked sponge and some baking spices.
Red apples and custard drizzled with honey next. Some tobacco and leather now, like a pipe smoker’s old favourite chair.
There’s also a faint plasticine aroma that is ever present, but always in the background.

Palate: Not an overly viscous mouthfeel, slightly smooth. A mixture of spices hit first: white pepper, cinnamon and ginger.
Some grapefruit bitterness, lemon pepper and black pepper-dusted strawberries emerge soon after.
A cherry-encrusted bitter chocolate note gradually increases as the dram matures.
The smoker chair element from the nose is also evident on the palate, I like it.

Finish: Long. The grapefruit and black pepper fruit notes last a decent amount of time. Some bitter chocolate also faded slowly from the palate.

Overall: It grew on me as I finished the dram. It’s one of those where I’d be torn as to whether to chance a bottle purchase to see if the bottle matured into a banger. I probably would.
