White Pheasant, (Cotswolds distillery), 63.5% ABV

Barley – Odyssey. Yeast – Anchor & Fermentis.

Nose – Lots of Plum, menthol sweetness, Fizzy, the ABV, Darker fruits, Fig, Clove, Raisins, very Jammy, Cake icing, Fizzy drink sweetness, Perhaps Lemonade.

Palate – More elegant than the nose, Lemon oil, Slightly biscuity, loverly mouthfeel, and warming, and with a little time ex sherry cask type notes come through, Fig, Clove, Raisins, and Cranberries.

My thoughts – This is a very impressive New make spirit, loads of flavours, and very robust and rounded.

Thanks to – Connor Teague, Brand ambassador from the Cotswolds distillery for joining us on this tasting, much appreciated.
